My philosophy, when in doubt, look at a haynes manual, or the equivalent. But to give u an answer- Engine rebuilds can be major, minor and anywhere inbetween.
A basic rebuilt consists of all seals/gaskets, bearings, machining, pretty much anything that has a lot of wear. It depends also on how old your engine is and how well its been taken care of. A major rebuild may consist of new pistons, rings, machining of major parts like crank journals, and machining warped parts like your head. You may replace many parts in your head like valves, machining valve seats, you can port and polish at this time also if u would like.
So what im saying is that an engine rebuilds vary a lot depending on condiiton of the engine, intentions of the engine, and how much you are willing to spend.

No problem Sometimes things seem cheap, but then unexpected things come up that u werent planned on doing, so just be prepared. Saving some money up sounds like a good idea, i know how ya feel, i just turned 18. Theres so much i wanna do, but im gonna save up a lot first so im not abandoning a project because a lack of money. Good luck!

A rebuild on a SOHC? You'd be better off IMHO buying a used BPDE/ZE from a junkyard and rebuilding it at your leisure. That way your car isn't off the road, and when the DOHC is all fresh and ready you can swap it in without any worries
