3 different A/C modes ?

3 different A/C modes ?
Hi all,
Proud owner of a brand new Mazda 3 and glad to join the forum.
I've done a bit of research into this and checked my manual, but I couldn't find out too much regarding the A/C modes...
When you press the A/C button, the A/C mode display shows A/C. When you press the button a 2nd time, it shows A/C Eco. If you press it a 3rd time, the display shows no modes (not even A/C).
If I understand correctly, the first mode (A/C) will just keep running at the set temperature. A/C ECO will measure the difference between outside and inside air and will adjust the air compressors(?) on or off. This mode is better for your petrol (hence the Eco mode).
But the last mode? There's still air blowing from the vents and it's not from outside air flow. It's as if the A/C is still on, but the mode display doesn't show anything. What does this mode do?

But it doesn't explain in detail what the "STOP" mode does
